Method
- Lightly coat the beef chunks in the flour and season with salt and pepper.
- Place the beef, onions, carrots, celery, and mushrooms into the slow cooker.
- Stir in the tomato purée, garlic, thyme, rosemary, and bay leaves.
- Pour over the beef stock, red wine, and Worcestershire sauce. Mix everything well.
- Cover and cook on Low for 7–8 hours (or on High for 4–5 hours) until the beef is tender.
- Remove bay leaves before serving.
- Serve hot with creamy mashed potatoes, rice, or crusty bread.
Notes
For a thicker sauce, stir in a little cornflour mixed with cold water during the last 30 minutes of cooking.
This dish tastes even better the next day as the flavours deepen.
Freezes well — cool completely, portion, and freeze for up to 3 months.
